To e-mail a single photo, either select its thumbnail and then select Transfer -> Mail selected images or press [F4].
But you can also e-mail a single photo from the Image Viewer/Editor. Open the photo in the Image Viewer by double-clicking its thumbnail.
Then click the e-mail button in the Image Viewer/Editor's toolbar.
